The perfect Shepherd's Pie.

500g of Lean Lamb Mince - seasoned well.
1 large carrot, 1 large onion and 2 cloves of garlic - all finally grated.
1 sprig Rosemary and a couple sprigs of Lemon Thyme. Remove needles and leaves from sprigs and finally chop.
Dash of Tomato Puree and Worcester Sauce.
1 mini bottle of Red wine (needs to be one that works well with lamb)
300 ml of Chicken stock..and reduce.

For the potato. Desiree potatoes are the best, I reckon. Season well. 2 egg yolks, some parmesan cheese and unsalted butter to taste. Pass through a ricer, whip and then use a piping bag to put it on the filling. Bake until golden brown, crispy and bubbling.
